Shrimp and Broccoli Stir Fry

Ingredients

  • 1/4 cup lower-sodium soy sauce

  • 2 tbsp rice vinegar

  • 1 tsp honey

  • 1 tbsp cornstarch

  • 1/8 tsp crushed red pepper

  • 2 tbsp sesame oil divided

  • 1 lb large shrimp peeled and deveined

  • 1/2 tsp freshly ground black pepper

  • 1/4 cup green onions diagonally cut into 1-inch pieces

  • 2 tsp fresh ginger minced

  • 3 cloves garlic thinly sliced

  • 1 tbsp olive oil

  • 2 cups broccoli florets

  • 1/2 large red bell pepper thinly sliced

Instructions

  1. Whisk together the soy sauce, rice vinegar, honey, red pepper flakes, and cornstarch in a small bowl.

  2. Use paper towels to blot the peeled and deveined shrimp dry.

  3. Heat a large wok or skillet over medium-high heat. Add the sesame oil to the pan and swirl to coat. Add the shrimp to the pan, season with the black pepper, and cook for 2 to 3 minutes, stirring constantly, until the shrimp turn pink. Do not overcook.

  4. Remove the shrimp from the pan to a plate.

  5. Add the green onions, ginger, and garlic to the hot pan and stir fry for 45 seconds, until fragrant. Use a slotted spoon to add this mixture to the plate with the shrimp.

  6. Add the tablespoon of olive oil to the wok, swirling to coat, and toss in the broccoli and red bell peppers. Cook and stir for another couple of minutes.

  7. Next, add the shrimp and onion mixture back to the pan. Pour in the prepared sauce and cook another minute or until the sauce is thickened and the broccoli is crisp-tender.

  8. Serve immediately over rice. Garnish with sesame seeds, if desired.
