Jalapeno Popper Tuna

INGREDIENTS

  • 2 cans tuna

  • 1 1/2 jalapeno, deseeded & finely chopped

  • 1/4 cup bacon, diced

  • 3 tbsp green onion, finely chopped

  • 1/3 cup shredded Monterey jack with jalapeno peppers and mild cheddar cheese (or shredded cheddar cheese)

  • 1/4 cup (+ 1 tbsp) avocado oil mayo

  • 2 tbsp plain Greek yogurt

  • 1 tsp apple cider vinegar

  • 1 tsp garlic powder

  • 1/4 tsp sea salt

  • dash of pepper

Topping (optional)

  • additional jalapeno and green onion

INSTRUCTIONS

  1. Finely dice the jalapeno and green onion.

  2. Cook bacon according to the package. Chop into small pieces.

  3. In a bowl, add canned tuna, jalapeno, green onion, bacon, and shredded cheese.

  4. In a small bowl, add mayo, greek yogurt, and seasonings. Mix to combine.

  5. Pour into bowl with tuna and mix to combine. Adjust seasonings if needed.

  6. Top on toast or however you like! Add additional jalapeno and green onion.
