Honey Orange Shrimp

INGREDIENTS

  • 12-15 frozen shrimp

  • 1 cup jasmine rice

  • 2 navel oranges, juiced

  • 2 garlic cloves, minced

  • 2 tbsp coconut aminos

  • 2 tbsp honey

  • 1/4 tsp ginger

  • 1/2 tsp salt

  • dash of pepper

  • 1 tbsp olive oil

  • 1 tbsp arrowroot powder + 2 tbsp water

  • optional: fresh cilantro, red pepper flakes

INSTRUCTIONS

  1. In a pan, add olive oil to medium-high heat. Add frozen shrimp and season with salt and pepper. Cook on both sides until cooked through.

  2. Cook rice according to package.

  3. Remove the shrimp from the pan and allow the pan to cool down before pouring in the sauce.

  4. Prepare sauce by combining the juice of oranges, coconut aminos, minced garlic, honey, ginger, sea salt, and a dash of pepper.

  5. In a separate bowl, mix arrowroot powder and water.

  6. On medium heat, add sauce and continue to stir. *be sure to continue to stir as the sauce will stick to the pan if it gets too hot.

  7. Add in shrimp and mix with sauce to completely cover. Remove from heat.

  8. Top on jasmine rice and add fresh cilantro and red pepper flakes.
