Black Bean Fiesta Corn Dip

Ingredients

  • 1 15- oz. can black beans drained

  • 1 can corn drained

  • 1/4 c. diced red onion

  • 2 avocado diced

  • 3/4 c. diced Roma tomato

  • Juice from 1 lime

  • 1/2 c. mayo

  • 1 c. salsa

  • 1/2 c. shredded colby-jack cheese

  • 1/2 c. chopped cilantro

  • 1/2 cup crumbled feta

Instructions

  1. Combine beans, corn, onion, avocado, tomato, feta, and lime juice in a bowl. mix and set aside.

  2. In a separate bowl, combine mayonnaise and salsa and stir until well-mixed.

  3. Pour salsa mixture over veggies and toss with shredded cheese and cilantro.

    1/2 c. shredded colby-jack cheese,1/2 c. chopped cilantro

Storage: Keep in the fridge for up to 3 days.
