Chicken Enchilada Dip

Ingredients:

  • 1 lb ground chicken ( can also use ground beef or turkey)

  • olive oil

    Spices:

  • 1 tsp garlic powder

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/2 diced red onion

  • 1 can of black beans, drained and rinsed

  • 1 can of sweet corn

  • 3 cups enchilada sauce

  • 1/2 cup shredded cheddar cheese

  • 1/4-1/2 cup mozzarella cheese


Instructions:

  1. Heat a pan over medium heat

  2. Add olive oil + diced onion

  3. Sauté for 3-5 minutes

  4. Add the ground chicken + spices

  5. Sauté until browned

  6. Add in the black beans, corn, enchilada sauce, and cheese

  7. Bake in the oven at 450F for 5 minutes

  8. Then turn the oven to broil and broil for 1-2 minutes to get the cheese nice and crispy

  9. Serve with tortilla chips!
